CLOS LAPEYRE JURANÇON DRY WINE

The harvest is always late, even for dry white wines! Apart from these particularly sunny recent years, they rarely start before the 5th to the 10th of October. Physiological maturity is determined according to the appearance, the thickness of the skin, and the taste ... the grapes are destemmed and/or pressed in a large pneumatic press with or without skin maceration beforehand. The juices are slightly settled and sometimes kept cold for 5 to 6 days before being reheated for alcoholic fermentation. Aging takes place in vats, on lees regularly brewed until spring. Bottling takes place from May.

The grapes come mainly from the Herrua vineyard cultivated by Hugo Peyroutet in Agriculture Raisonnée. We do the harvest ourselves; the grapes are vinified at Clos Lapeyre.

100 % gros Manseng.

VINIFICATION

The harvest is destemmed and pressed, the slightly settling juices ferment with their own indigenous yeasts in stainless steel vats for 3 to 4 weeks. The wines are aged on lees until spring.

AGING

Aged on lees for 6 months in Inox vats.

THE TASTING

With a sharp palate with lots of freshness, fruitiness, and a nice note of minerality on the finish. It is an expressive wine with an intense nose of citrus fruits, white fruit, green hazelnut ... The attack is frank, fruity; the tense, aromatic, balanced and persistent palate.... typical of the Gros Manseng grape cultivated at an altitude of 400 m!

WINE PAIRING

Goes well with shellfish and other fish cooked in a variety of spices (curry, safran...). Also associated well with mountain cheeses whether it be goat’s cheese or sheep cheese. It is also appreciated simply with a bit of “charcuterie” from our region.
