The first cuvée of 300 bottles was produced in 2009 with a maceration of 3 weeks. In 2011, the second cuvée was made with 5 weeks of maceration. These two cuvées needed a few years of aging.
Since 2015, the macerated harvest is aged in casks and a Dolia (terracotta jar) of 400l and we now practice a much longer maceration (10 months), we aim to obtain tannins much more flexible and perfectly integrated into the structure of the wine.
